  A flavorful South Indian chutney perfect for pairing with dosa, idli, or chapati.     Ingredients: 4–5 dried red chilies (adjust to spice preference) 1 or 2 medium onions , chopped 3 medium tomatoes , chopped 5 garlic cloves 1 tablespoon oil (preferably coconut oil) ½ teaspoon mustard seeds 1 sprig curry leaves Salt to taste 1 tablespoon jaggery (adjust to taste)    Instructions:   Soak the red chilies in warm water for about 10–15 minutes to soften.   In a blender, add the soaked chilies, sliced onions, chopped tomatoes, and garlic cloves. You can make delicious wine right at home. 🥳 Ingredients: Black Grapes : 2 kg Sugar : 2 kg Yeast : 10 g Whole Wheat Grains : 50 g Water : 3 liters Earthen Pot/Bharani/Jar Wooden Spoon (optional, for stirring) Directions: Part 1: Preparation (Day 1 to Day 21) Boil 3 liters of water and let it cool completely. Thoroughly wash and clean the grapes, remove the stems, drain the water, and dry them with a clean cloth. Place the grapes in the jar and smash them with a wooden spoon until the skins are ruptured. Ingredients: Okra (Vendakkai) : 500 g Tomato : 1 (chopped) Onion : 1 (chopped) Sambar Powder : 1-2 tsp Besan (Chickpea) Flour : 1-2 tsp Dried Red Chilies : 1-2 Mustard Seeds : 1/2 tsp Oil : for sautéing Directions: Prepare the Okra: Wash and chop the okra. Ensure it's completely dry before cooking for a crisp texture. Sautéing: Heat oil in a pan, add mustard seeds and dried red chilies. Let them splutter. Add the chopped onions and sauté for a few seconds until they turn soft and translucent. Stir in the chopped tomato and sauté for another minute. Spice and Okra: Add sambar powder and stir to combine. Add the chopped okra and sauté well, stirring occasionally. When the okra starts to stick together, sprinkle besan flour and stir well. Cook Until Done: Keep stir-frying until the raw taste of besan disappears and the okra is fully cooked. Serve hot with rice or chapati. Cheese Veg Sandwich

An easy delicious vegetarian sandwich. Soothing to the tastebuds of cheese and veg lovers. Ingredients: Bread slices Capsicum- 1 (finely chopped) Onion - 1 (finely chopped) Cheddar Cheese - 100gms (Grated) Mozzarella Cheese - 100gms (Grated) Salt - pinch Pepper powder - 1/2 tsp Chaat masala powder - 2 tsp Green chutney Directions: In a bowl, add onion, capsicum, both the cheese, salt, pepper, chaat masala powder. Mix altogether.  Take a slice of bread and spread the Green chutney, then spread the cheese mix. Top it with another slice. Spread butter on top of both sides. Toast it in a sandwich maker or toast it in a pan on both sides. Serve hot.

Liver Pepper Masala

One of my favs.... this is a must-have for the liver lovers 😋😻  Ingredients: Liver - 500 gms Shallots/Sambar onion - 10 Garlic - 5 cloves Ginger- 1 inch Green chillis- 1-2 Curry leaves - 1 stem Black pepper - 1 tsp Turmeric - half tsp Red chili powder - half tsp Salt - to taste Seasoning:- Onion- 1 medium Chopped Ginger- half tbs Chopped Garlic - half tbs Black pepper powder - 1 tsp Garam Masala powder - 1 tsp Fennel seed powder- 1/3 tsp Directions:- Wash and drain the Liver very well. Grind the shallots, garlic, ginger green chilies to a coarse paste. In a Kadai add the liver, oil, coarse paste, curry leaves, black pepper, turmeric, red chili powder, salt, half cup water to the liver. Cook till the water almost evaporates stirring occasionally. Beetroot Thoran (Coconut Beetroot Fry)

Well, we've all heard of the number of benefits in beetroot. Now, this one version of beetroot I like to eat with rice. Ingredients: Beetroot - 1 cup  Oil - 1 tbs Mustard seeds - 1 tsp Shallots - 2-3 Green chilies -2 Curry leaves - few Grated coconut - 1/2 cup Water- 2 tbs Directions: Wash peel and grate beetroot. In Pan, heat oil, add Mustard, and wait for it to splutter. Then add the shallots, green chilies, curry leaves grated beetroot, and water. Mix all together and close the lid and cook for 2-3 mins.  Open and add the grated coconut, mix and cook for 1 more minute and switch off the flame. Serve hot.

Green Coconut Chutney

One of the delicious south Indian chutney to have with dosa Ingredients : Grated coconut -1 cup Green Chillis - 1-2 Curry leaves - few Shallot -1-2 Ginger- 1/2 inch Roasted chana dal- 1 tbs water - 1/2 cup For Seasoning Coconut Oil - 1 tbs Mustard seeds- 1/2 tsp Curry leaves - few Directions: In a mixy grinder jar, add the grated coconut, green chili, curry leaves, shallot, ginger, roasted chana dal and water to paste. Pour it to a serving bowl In a seasoning pan or tadka, pour coconut oil, add mustard seeds, when you hear the splutter, add curry leaves, then pour this over the coconut mix and serve with hot dosas.

Crispy/Rice Dosa

Dosa is basically pancakes made of rice and lentils. It is sometimes made in crepe appearance also. It is a typical south Indian breakfast, traditionally served with coconut chutney and sambar. With this easy homemade batter, you can make different dishes like plain dosa, set dosa, masala dosa, uthappams, and paniyarams. Ingredients: Dosa rice - 4 Cups Urad Dal(split,skinless black gram) - 1 Cup Fenugreek Seeds(methi) - 1 tsp Cooked Rice/ Poha - 1-2 tbs Salt - to taste Water - As needed Ghee/oil - As needed Directions: Wash and soak, rice and urad dal in two separate vessels for 6 hrs. Add fenugreek seeds to the urad dal. Before grinding, drain the water in which the rice is soaked. Grind the cooked rice, soaked rice, and urad dal along with the water in which it was soaked in a Blender/mixy/grinder. Add little more water if needed till you get a smooth batter. Carrot Scrambled Egg Stir Fry

A great dish to have with rice or chapati. Ingredients: Grated Carrot - 2 Cups Egg - 1-2 Shallots(red onion) - 3 Green chilies - 2 Curry leaves - few Mustard seeds - 1/2 tsp Oil - 1 tbs Directions: In a Kadai, pour oil, then add mustard seeds, when you hear it splutter, add red onions, green chilies, curry leaves and saute for a few seconds. Add the grated carrots, cover with a lid, and cook, till the raw taste of the carrot is gone. Open the lid, make a well in the center, break open an egg, and scramble it in the middle.  Mix all together and cook for few more seconds and serve. Tips: You can make thoran with the same version by replacing the egg with grated coconut.

French Toast/Bread Toast

One of the easiest, and my go-to breakfast, on lazy Saturday mornings. I am not gonna lie, I sometimes even crave for this dish.🤗 Ingredients: Bread - few slices Eggs- 2 Milk - 1cup Vanilla Essence Cinnamon powder - 1/2 tsp Powdered Sugar - 1 tbs ( optional) Directions: In a bowl, add the milk, eggs, cinnamon powder, vanilla essence, and sugar. Whisk all together well.  In a frying pan, add butter. Take a bread piece and soak a little in the mix prepared above, transfer it to the pan and fry with medium heat, till you see light brown color on both sides.  Serve with maple syrup, honey, or chocolate syrup. Tips: Do not soak the bread in the mix for too long, it will be very soggy and difficult to transfer it to the frying pan or Tawa.

Coleslaw

Back in my school days in the Gulf, this creamy side dish often came with KFC or pizza—and it was a favorite! I recently recreated it from memory, and it turned out just as delicious. Here's the recipe in case you’d like to try it too. Ingredients: White cabbage – 2 cups Red cabbage – 1/4 cup (optional, for color) Carrot – 1/2 cup Onion – 1 small Mayonnaise – 1/2 cup Curd (plain yogurt) – 1/4 cup Sugar – 1 tbsp (adjust to taste) Vinegar – 1/2 tsp or Lemon juice – 1 tsp Salt – to taste Pepper powder – 1 tsp Directions: Shred the cabbage, onion, and carrot finely. In a bowl, combine all the vegetables with the mayonnaise, curd, sugar, vinegar or lemon juice, salt, and pepper. Mix well until everything is evenly coated. Refrigerate for at least 30 minutes before serving. Tips: Red cabbage is optional, but it adds a lovely pop of color. You can adjust the mayonnaise and curd ratio based on your preference—use more curd and less mayo for a lighter ve...

If you love munching popcorn, I promise, you're going to love this version. Ingredients: Corn kernels - 1/2 cup Sugar - 1/2 cup Butter - 1 tbs Soda bicarbonate(baking soda) - 1/2 tsp Butter/oil - 2-3 tbs Directions: In a medium-size pressure cooker, heat oil, add the corn kernels Keep stirring on medium heat, till it turns light in color. Close the lid and turn to high heat, wait for the popcorn to start popping and take off the lid till you stop hearing the sound. Transfer to a bowl and let it cool. In a large Kadai or pan, spread the sugar evenly, and turn the heat to medium. When you start seeing the sugar melting, start mixing till it turns to light golden in color, lower the heat.  Add butter, and mix, you start seeing bubbles start to form. Immediately take off the stove, add the baking soda and keep stirring, you see the caramel starts foaming, add the popcorn and mix from underneath, till all the popcorn is coated. Transfer to a...

Refried Beans

This is traditionally a Mexican cooked and mashed beans. I started making this, when I made loaded nachos. This recipe is used as an ingredient as well as a side dish or dips for many Mexican dishes. Ingredients: Dry Red Beans - 1 cup Olive Oil- 1 tbs Onion- 1 Garlic- 4-5 cloves Chipotle adobo sauce or powder- 1/2 tbs Water/veg stock - 1 cup Directions: Soak the beans overnight. Drain and pressure cook them for 4-5 whistles or till they become soft and mushy. In Pan, add some oil, Garlic, and Onions. Saute for some while. Add chipotle sauce or powder and the beans. Saute for some time and mash the beans to your desired consistency. Add water and salt. Keep stirring till it becomes semi gravy consistency. Tips: For cutting short cooking time, you can get the store-bought canned baked/ cooked beans. But I prefer to make from scratch, dry beans. Ullivada/Onion pakoda

Here is one of my go-to snacks along with tea, where the ingredients are simple and always available in your kitchen. Ingredients: Onion - 1-2 (thinly sliced) Ginger - small piece (finely chopped) Bengal Gram powder - 1/2 cup Maida(All purpose flour) - 1 tbs Red chili powder - 1 tsp Hing - a pinch Curry leaves - Few (roughly chopped) Soda bicarbonate - a pinch (optional) Water - 2-3 tbs Directions: In a bowl, mix the onion, ginger, Bengal gram powder, maida, red chili powder, hing, beaten egg, water and curry leaves to form a not so watery batter. In a Kadai, heat oil, take some batter in your hand and slowly drop small dollop sized batter into the oil.  Fry in medium heat till you see the pakodas light brown color. Strain the pakodas into an absorbant towel or strainer. Serve hot. Tips: The water and the flours in the batter should be in the consistency just enough to coat the onions, to get the onions evenly cooked and crisp.  Keep in mind, that onions also relea...

This is one snack I love which has zero calories. Who knew you could make popcorn at home and that too without a popcorn machine. It's that simple and easy. You can have it for teatime, movie nights, and sleepovers. You can make this in different variations, salted, caramel, or Piri Piri. Ingredients: Corn kernels - 1/2 Cup Butter/Oil - 2 tbs Salt - to taste Directions: In a pressure cooker, heat oil, add the corn kernels, mix them on medium heat, till you start seeing the corn turning light in color. Close the lid, turn the heat on high. You will start hearing the sound of the corn popping.  Turn off the stove when you stop hearing the popping sound.  Transfer to a bowl sprinkle some salt and serve. Tips: The pressure cooker should be big enough to hold the popped corn inside.  Alternatively you can use a heavy-bottomed large Kadai with a tightly closed lid.
