Refried Beans
This is traditionally a Mexican cooked and mashed beans. I started making this, when I made loaded nachos. This recipe is used as an ingredient as well as a side dish or dips for many Mexican dishes. Ingredients: Dry Red Beans - 1 cup Olive Oil- 1 tbs Onion- 1 Garlic- 4-5 cloves Chipotle adobo sauce or powder- 1/2 tbs Water/veg stock - 1 cup Directions: Soak the beans overnight. Drain and pressure cook them for 4-5 whistles or till they become soft and mushy. In Pan, add some oil, Garlic, and Onions. Saute for some while. Add chipotle sauce or powder and the beans. Saute for some time and mash the beans to your desired consistency. Add water and salt. Keep stirring till it becomes semi gravy consistency. Tips: For cutting short cooking time, you can get the store-bought canned baked/ cooked beans. But I prefer to make from scratch, dry beans.
