Carrot Scrambled Egg Stir Fry
A great dish to have with rice or chapati.
Ingredients:
Grated Carrot - 2 Cups
Egg - 1-2
Shallots(red onion) - 3
Green chilies - 2
Curry leaves - few
Mustard seeds - 1/2 tsp
Oil - 1 tbs
Directions:
- In a Kadai, pour oil, then add mustard seeds, when you hear it splutter, add red onions, green chilies, curry leaves and saute for a few seconds.
- Add the grated carrots, cover with a lid, and cook, till the raw taste of the carrot is gone.
- Open the lid, make a well in the center, break open an egg, and scramble it in the middle.
- Mix all together and cook for few more seconds and serve.
Tips:
- You can make thoran with the same version by replacing the egg with grated coconut.
