Coleslaw
Back in my school days in the Gulf, this creamy side dish often came with KFC or pizza—and it was a favorite! I recently recreated it from memory, and it turned out just as delicious. Here's the recipe in case you’d like to try it too.
Ingredients:
- White cabbage – 2 cups
- Red cabbage – 1/4 cup (optional, for color)
- Carrot – 1/2 cup
- Onion – 1 small
- Mayonnaise – 1/2 cup
- Curd (plain yogurt) – 1/4 cup
- Sugar – 1 tbsp (adjust to taste)
- Vinegar – 1/2 tsp or Lemon juice – 1 tsp
- Salt – to taste
- Pepper powder – 1 tsp
Directions:
- Shred the cabbage, onion, and carrot finely.
- In a bowl, combine all the vegetables with the mayonnaise, curd, sugar, vinegar or lemon juice, salt, and pepper.
- Mix well until everything is evenly coated.
- Refrigerate for at least 30 minutes before serving.
Tips:
- Red cabbage is optional, but it adds a lovely pop of color.
- You can adjust the mayonnaise and curd ratio based on your preference—use more curd and less mayo for a lighter version.
