Coleslaw

Back in my school days in the Gulf, this creamy side dish often came with KFC or pizza—and it was a favorite! I recently recreated it from memory, and it turned out just as delicious. Here's the recipe in case you’d like to try it too.


Ingredients:

  • White cabbage – 2 cups
  • Red cabbage – 1/4 cup (optional, for color)
  • Carrot – 1/2 cup
  • Onion – 1 small
  • Mayonnaise – 1/2 cup
  • Curd (plain yogurt) – 1/4 cup
  • Sugar – 1 tbsp (adjust to taste)
  • Vinegar – 1/2 tsp or Lemon juice – 1 tsp
  • Salt – to taste
  • Pepper powder – 1 tsp

Directions:

  1. Shred the cabbage, onion, and carrot finely.
  2. In a bowl, combine all the vegetables with the mayonnaise, curd, sugar, vinegar or lemon juice, salt, and pepper.
  3. Mix well until everything is evenly coated.
  4. Refrigerate for at least 30 minutes before serving.

Tips:

  • Red cabbage is optional, but it adds a lovely pop of color.
  • You can adjust the mayonnaise and curd ratio based on your preference—use more curd and less mayo for a lighter version.
