Loaded Chicken Nachos


Loaded Chicken Nachos is one of my favorite food order whenever I go to Taco Bell. But making it at my very own kitchen is even more healthy, tastier and fuller. Usually Friday nights we used to make pizzas or burgers. Now this is added to the list, as everyone at home loves this, especially the kids.

Ingredients:

For preparing the Loaded nachos:
Nachos- 200 gms
Cheese sauce/Mayonaise- 1/2 cup
Taco seasoning- 1 tsp
Spring onion- 1/2 cup (chopped)
Cheddar cheese - 1 cup (grated)

For Meat sauce:
Onion- 1 medium
Garlic- 5-6 (chopped)
Minced Chicken- 1 cup
Refried Beans - 1 cup
Taco seasoning- 1/2 tbs
Salt- to taste
water- 1/2 cup

For Salsa:
Onion - 1
Tomato - 1
Jalapeno - 1 (optional)
Capsicum - 1
acocado (optional)
Black olives(Sliced and pitted) - 1
Coriander Leaves - 1/4th cup
Lemon Juice - 1 Tbs
Salt - to taste

For Cheese sauce:
Butter - 1 tbs
Milk - 1 cup
Plain Cheese - 1/2 cup
Cheddar cheese - 1/2 cup
Salt- to taste
Pepper - 1 tsp
Garlic powder - 1 tsp
Onion powder - 1 tsp



Directions:

For making Cheese sauce:
  • In Saucepan, add butter, milk, cheeses till all melts.
  • Add salt, pepper, garlic powder, onion powder.
  • Let it boil till the sauce thickens.
For making Salsa:
  • Finely chop Onion, Tomato, Jalapeno, Capsicum, Coriander leaves, Olives 
  • Mix all of them in a bowl along with lemon juice, and salt.
For making Meat sauce:
  • In a pan, pour little olive oil, add onion, garlic. Saute till the onions turn a little brown. 
  • Add the minced chicken. 
  • Cook till the chicken is done, and add the refried beans, taco seasoning, salt, water. 
  • Let the sauce come to a bit of watery consistency. Switch off flame.
For making the Loaded Nachos:
  • On a casserole or baking pan, layer the nachos.
  • Next layer the meat sauce, on top.
  • Then layer the salsa on top, and sprinkle some taco seasoning.
  • Layer with cheese sauce and garnish with some spring onion.
  • Top it off with cheddar cheese.
  • Preheat oven for 180 degrees celsius and bake for 5-8 mins or till the cheese melts.
Tips:
  • You can use any Nachos, for this recipe. I use Doritos or Cornitos chips for the base.
  • For the veg version, you can skip the meat and increase the quantity of refried beans and salsa to make this dish. 
  • I use Mayonaise instead of the cheese sauce, ideally, you are not supposed to, but sometimes I am just lazy and add what I have in my fridge, ready-made. It just tastes the same and great too.
